Cheers to Pears!

I made these a few years ago, then totally forgot about them! They've been hanging from my curtain rod for ages now, and when I re-arranged my curtain ornaments (wind chimes, keyring garland etc) the other day, I rediscovered them! Here's a pear recipe to go along with them! It's easy, scrummy, and healthy! Have fun making it alone or get the kids to help, Eat it hot with ice cream or cold from the fridge! Yummy!

  • 1/4 cup margarine, cut in 1/2" dice
  • 1/3 cup uncooked quick-cooking oats
  • 1/4 cup all-purpose flour
  • Sugar substitute equal to 2 tbspns sugar
  • 2 cups chopped firm-ripe pears
  • 2 tsp fresh lemon juice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp grated lemon rind
Method: Toss margarine, oats, flour, and sweetener together in a medium mixing bowl; reserve. Place pears in another mixing bowl and toss with lemon juice, cinnamon, nutmeg, and lemon rind. Arrange pears in the prepared pan. Sprinkle oat mixture over fruit. Bake for 15 minutes. Serve warm or cool.
